Pepper
Pepper is one of the most common spices in European and Asian cuisine for its flavor and its use as a preservative.
Black peppers are made by picking the pepper berries when they are half ripe and just about to turn red. They are then dried in the sun, which causes them to shrivel and become black in color. White peppers differ only in being prepared from the ripe fruits. They are picked when very ripe and subsequently soaked in brine to remove their dark outer shell leaving just the white pepper seed.
